Simple to prepare and utterly delicious these gorgeous little rounds of apricot and coconut perfection make a heavenly snack. And these apricot and coconut bliss balls are everything a sweet snack should be – easy to make, a collection of simple whole foods and portable! We love nestling a couple of these into our lunch box alongside a tub of yoghurt, a few fresh berries and a simple sandwich. Yum.
Being oh so simple to prepare – these orange hued beauties are also the perfect opportunity for you to get your little ones into the kitchen helping too. Grace and Harry both love making these with me – taste testing as the roll them into little rounds. By the end of our cooking session the kitchen [and kids] are covered in coconut but I don’t mind – they have so much fun and its a great way to keep them happy.
To make your own coconut and apricot bliss balls simply…
Begin by placing the apricots, coconut, almond meal, coconut oil, vanilla bean paste and honey into the large bowl of a food processor and blitz until the mixture comes together.
If needed, add a splash of water until the mixture is wet enough to shape into balls.
Take heaped teaspoons of the mixture and shape into balls and roll in coconut until coated. Continue rolling and coating in coconut until no mixture remains. These balls will keep refrigerated in an air tight container for 7 days. They also freeze beautiful, simply pop into a freezer safe bag or container and stash in the deep freeze for up to 3 months.

- 1 cup (100 grams) almond meal (ground almonds)
- 1 tablespoon coconut oil, melted

Yes, absolutely! 1/2 cup desiccated coconut plus 1/2 cup oats. So basically delete the almond meal and replace with an extra half cup of oats and coconut. Happy cooking! X
